As part of the Summer Holiday Countdown I’ve been talking about getting motivated, devising a plan, and now you’ve got to eat like you mean it! Because in getting bikini-body ready, and overall in getting healthy, your diet is an important part of that. You can’t out-train a bad diet. Read that over and over again.
And since it’s the start of summer here in the northern hemisphere, which means it’s lighter until later, eating lighter is easier.
I’m all about simple, easy, tasty meals. No fuss sort of food. Unless someone else is cooking for me, then by all means, fuss away!
So here are the Running in High Heels top three meal ideas for summer…
As the days get warmer, I usually swap out my oats and berries at breakfast for something lighter…Fage Greek Yoghurt and sliced up banana. Simple, easy and a good combo of protein and carbs to kick-start your metabolism in the morning. Plus, a sprinkling of coconut flakes – just because I love it!
Skinny Orange Chicken
I do enjoy a chicken stir-fry – mainly because it is a One-Wok Wonder! So I’m always keen to try out new, healthy stir-fry recipes. This one I found on Pinterest and I really enjoyed! Fry chopped chicken breasts in coconut oil with garlic, ginger and chilli, add some orange juice and broccoli and let it sizzle away. Once all cooked through add some Sriracha sauce (if you like it spicy!), some orange zest and sesame seeds. Yum.
Pesto Salmon Bake
It is known in my family that Monday nights are salmon nights, according to me at least. Surprisingly they’re not really keen for this (there is a lot of sighing). The only person who usually eats it is my brother’s girlfriend, Maria. I can’t make claim to this recipe, Maria took my Monday Night Salmon Night and vastly improved it with this Pesto Salmon Bake. You can use salmon fillets or a whole piece of salmon, cover with pesto and some lemon juice (sliced red peppers too if you like), and wrap it in foil and pop into the oven, or throw onto a BBQ if the weather obliges!
Running in High Heels Tip: Food Prep
The key to eating healthy and eating ‘clean’ for me is preparation. This is my saving grace, as I am often out of the house from early in the morning until late in the evenings, and you don’t always have the right foods available when you’re out and about and busy at work. So I have started prepping my meals on a Sunday evening and packing them into Tupperware and lining them up in the fridge. Then in the morning I can just grab them and I’m good to go.
